Snow Day

 


        The winter storm  that was predicted to hit our area is definitely here. These days you never really know if a storm is going to come or be as severe as predicted. We already have several inches on the ground and the snowfall is continuing to be heavy. 

        C and I bought everything we might need yesterday. The stores were crowded with people shopping for supplies. Costco was very busy as well, it looked like people thought they would be snowed in for weeks by the amount of food and other supplies I saw in many of the carts. C and I enjoyed some pizza in the food court while we watched the line of shoppers head toward the exit doors with their purchases.

        Days like this are a precious gift to an introvert like me. I get to stay home all day and get some needed down time. I can relax. I have an entire day to do almost whatever I want.

        One of the things I have to do is cook some tofu so I have it ready for meal prep this week. I have a couple of 12 hour shifts so I like to meal prep ahead of time.  I'm going to try shredding the tofu, seasoning it, then baking it which I have not done before. The shreds can be used in different ways. it seems like a more flexible option than the cubes I usually make.

        C and I have been invited to a St. Patrick's day dinner this week. I don't like to come empty handed to things like this so I'm going to make some soda bread. Since I've never made it before I thought today might be a good day for a trial run. That way if it doesn't turn out, I have time to make a non food hostess present. (I may make it anyway and bring both.)

        I may even try making a white bean soup crockpot recipe. I can freeze the soup and use it for quick meals or as a meal at work. Plus today seems like the best kind of day to make something like that. 

        Maybe this doesn't sound very relaxing, but I enjoy cooking. There will be plenty of time for relaxing with a hot cup of tea and a book while things are baking and cooking. We recently replaced the speaker wires on my stereo so I can listen to music while I'm cooking. 

        It's going to be a really good day.

  I don't have pet peeves like some people. I have whole kennels of irritation. Whoopi Goldberg          Whoopi and I agree on this topic. Barnaby's New "Toy"

           Now that we are back home and have re-established our routine with the cats, Barnaby has discovered a new "toy". The word is in quotation marks because it isn't really something to play with. However, one thing I have discovered in my many years of living with cats is that everything is one of two categories: food or toys.          I discovered this new interest a day or two after we got home. I was in the bathroom washing my hands when Barnaby jumped on the counter. He watched the water coming out of the faucet with great interest. I turned the water down to a thin trickle to see what he would do. He continued to watch it for a little bit and then started to bat at the stream with his paw. My Day

              This past week was the last part of a stretch of six working days in a row. The reason why I can do  a stretch like that is because Sunday is the first day of the work week. That means a when I work from Thursday to Tuesday it's only three days in a row each week. Before my boss went home for the day on Tuesday, I asked her to give me my second shingles shot. I knew I had the next two days off in case I reacted badly to it which I did. (This is normal for me which I'm perversely grateful for. At least this means I have a working immune system.) Wednesday was spent feeling sick except for a few hours in the afternoon when I fortified myself with ibuprofen and a Coke Zero so C could take me out to lunch at a nearby Indian restaurant.
